During this time of social distancing, long hours working from home and Netflix and chilling, several people are gaining what America is calling, the COVID-15.
With this trend on the rise, finding healthy meals to incorporate into everyday life is a must. Most people find it hard to pick healthy meals that are fast, easy and don’t break the bank. There are a lot of easy healthy meals out there that are freezable and easy to meal prep. Things like eggs, chicken dishes, and even casseroles can be tasty, affordable, and easy to make.
Just like we’ve all heard for most of our lives, having a healthy breakfast starts your day off on track. Not only can we start our day with them but they can be a versatile make-ahead meal that can be transitioned into a brunch or dinner in a pinch.
Might I present you with the Egg Muffin! You can use this simple recipe as a canvas for your breakfast needs. I want to highlight this recipe not only because of its versatility but also because it can feature things that you already have at home.
Still, craving Mexican cuisine during this hiatus? Why not try making a fajita egg muffin (frittata) with sautéed onions, peppers, and your choice of meat. Also, you can go very traditional with cheese, sausage, and onions.
This recipe can be anything you wish; it really is a blank slate for flavor. Experiment and see what you like, also sprinkle in some cardio, and that COVID-15 will drop right off!
Egg Muffin Base Recipe:
Cooking spray
6 large eggs
3 tbsp. milk
1/2 tsp. garlic powder
Kosher salt
Freshly ground black pepper
To this add whatever meats, cheeses, vegetables and seasonings you’d like. It is an “all-in-one” recipe, meaning you can put it all in one bowl and mix.
Preheat your oven to 350 degrees.
Spray muffin tin, or cake pan, with cooking spray and bake until cooked through and golden, this should take 30 to 35 minutes.
